Frito Bandito!

1 lb ground beef
1 medium onion, chopped 
2 cloves garlic, minced 
1 can condensed cream of mushroom soup, undiluted 
1 (11 ounce) can Mexicorn, drained 
1 (4 ounce) can chopped green chilies, drained 
1 (10 1/2 ounce) packages Frito corn chips 
1 (10 ounce) can enchilada sauce 
2 cups shredded Cheddar-Jack cheese
Salt and pepper to taste



Lightly oil or spray a 12 inch dutch oven. 
Brown beef, chopped onion and garlic over a full compliment of coals; drain. 
Add the soup, corn and chilies; stir to mix well. 
Season with salt and pepper to taste, if desired. 
Cover with bag of corn chips.  Pour can of enchilada sauce evenly over chips.  Top with cheese. 
Bake at 350 degrees for 15-20 minutes or until heated thoroughly and cheese has melted.
     
12 coals in a circle around the bottom and 18-20 on top.

  1. I followed the instructions relatively closely on this one, and it turned out beautifully, despite that my dutch oven was one of the taller ones (8 quart, I think). However, I had precooked the meat and onions, without which my coals might not have lasted quite long enough, since a taller oven takes longer to heat.

    As far as flavor goes, it was good, but if I were to make this again I would try an experiment. Replace the cream of mushroom soup with sour cream, maybe half or 3/4 cup. Add a good dose of taco seasoning when cooking the meat and onions. Maybe replace the green chilies with a diced fresh tomato. Maybe use pepper-jack cheese. (I did cheddar, and it probably would've been better with jack of some sort). Maybe add some cheso fresco. No pepper. You'd end up with a totally different dish, but I want to try it sometime.

  2. I loved this dish! It was super easy and I really liked it! I was able to cook all of it just using the recommended amount of coals. I really liked the flavor and I liked how easy it was. It was fun to share with others and I was grateful that it turned out well. I think that this a very simple recipe and that it would be hard to mess up. I loved it!
