Dutch Oven Potatoes and Bacon

Total cook time about 45 mins


Ingredients:
1 lb Bacon-chop to bite size
2 lb Diced Potatoes
1 Large Diced Onion
1/4 Cup Butter
Salt & Pepper to taste

Instructions:
In your Dutch Oven, cook bacon until almost crispy. Add onions, cook to until onions are soft. Add diced potatoes and butter. Salt and pepper to taste. Cook until potatoes are fork tender.

Serves 6-8

  1. This was a great recipe to try and it turned out well. The one thing that I found was the bacon adds substantial grease to the bottom of the dutch oven, so I wouldn't add butter right away until it seems necessary. Additionally, I actually replaced the butter with vegetable oil (also olive oil is a good option) because I felt like with added butter it would take away from the taste. My hope was also to get crispier bacon and potatoes. With having extra oil it soaked the potatoes a little too much.

    I also found with the 45 minute cook time that you have to add quite a bit more briquettes than the 14 briquettes on top and 10 on bottom. I'd include around 16 on top and 12-14 on bottom. Just know with less it'd turn out to be about an hour to an hour and 15 minutes.
