Chicken Rice Brocolli Casserole

for a 12" Dutch Oven

2 cups  rice
8  chicken thighs
1 head fresh Broccoli
2 cans  cream of mushroom soup
5 cups water

Place 16 coals under Dutch Oven and 8 on top.  Heat chicken in water in Dutch Oven for 15 minutes. Add rice and cook for 15 more minutes.  Add chopped broccoli and mushroom soup and cook until done, about 15 more minutes.  Check rice to be sure the dish is done.

  1. I made this with my fiance while we were at a park. It was really easy to prepare and cook and surprisingly the rice turned out great! It did take a lot more coals than was recommended and it took about 1 hour and 15 minutes to fully cook but it tasted delicious (make sure and add enough salt!) and was a really easy cleanup.

  2. This recipe is one of my favorites. I was surprised how easily the rice cooked in the dutch oven. I substituted cream of mushroom with cream of chicken soup, and I added bread crumbs to the top for extra flavor.
