Ingredients:
- 3 tbs Butter (optional) *
- 10-15 Gold potatoes, sliced thin (with or without skins)
- 1/2 lb of Bacon.
- 1 medium onion, sliced
- Grated cheese - 4 cups
- 1/2 can of soda *
- Salt and pepper
* When I made this, I used no butter, it was already greasy enough from the bacon. And for the soda I used cream soda. I was worried about the soda flavor overwhelming everything, but it doesn't, it just gives it a little rustic tinge. I imagine you could use sprite, coke, or anything else you like.
Directions:
1. Cut potatoes and onions. Mix them in a large bowl with salt, pepper, and 3/4 of the cheese.
2. Cut bacon into 1 inch pieces and fry in Dutch oven until crisp. Remove bacon and mix in with potatoes and onions, but leave grease in Dutch oven.
3. Pour the ingredients from the bowl into the Dutch oven, then dot with butter (optional).
4. Pour liquid over the top.
5. Cover and cook between 350-400 degrees for about 45 minutes. When potatoes are tender, sprinkle the rest of the cheese, cover and let cheese melt, then serve.
