4 eggs
1 cup milk
3 tablespoons sugar
1/2 teaspoon vanilla extract
1/2 teaspoon salt
3/4 cup flour
4 tablespoons butter
1/2 cup sliced strawberries
1/2 cup blueberries
1/4 cup honey
Steps
- Get your oven preheating on the coals
- In a large bowl, whisk together the eggs, milk, sugar, vanilla, and salt. Add the flour and whisk to combine. Set the batter aside.
- Add the butter to your warmed dutch oven, thoroughly coating the bottom. Add the berries and honey. Stir, cooking, until just softened and the honey coats the fruit, about 5 minutes. Shake the oven gently to distribute the fruit evenly over the bottom. *I like adding some brown sugar to this for extra fun.
- Pour the batter into the oven and bake for about 20 minutes until it is browned and puffed. Serve immediately with any toppings that make you happy. *I put bananas, raspberries, syrup, and whipped cream on top.
